appimage: Make wayland-protocols build

Update the dependencies: wayland-protocols doesn't depend on Qt.
plasma-wayland-protocols needs ECM.

Build wayland-protocols without tests. We don't need the tests and the
tests require a newer version of wayland-scanner than the one included
in AlmaLinux 8.10.
